How do motherboard onboard soundcards output surround sound?

Hi all,

I'm looking into speccing a new pc (small form factor, for home theatre, replacing my mac mini which has been having issues playing surround sound), and notice many motherboards output up to 7.1 sound through a single jack. What format do they use to achieve this, what should it connect to at the receiver end?

My amp is a quite old Denon AVR-3802 which uses optical and coax digital inputs (no hdmi etc, that would be too easy!), so I want to make sure if I get a new mini pc to do my home theatre, it can do surround sound fine on it.
