Hi guys,

I'm going through a Chicken Wings phase... and I would like to try some good recipes...

So please could anybody here suggest what sauces or marinades they use..?

Thanks

Cover them in Franks Xtra Hot Sauce which you can get from Sainsburys or Waitrose. It's like Buffalo wings only a dillion times more awesome.

Easy, but you need one important ingredient - Franks Hot Sauce. Only place I know that sells it is the orange supermarket. Should be near the Nando's sauces.

Anyway, the wings bit is easy.

1. Little bit of oil in baking tray.
2. Season the wings on both sides
3. Bake for 30 minutes at around gas mark 5-6 until crispy on top, then turn over.
4. Bake for 30 minutes more - check wings are cooked and crispy.
5. Mix 2 parts Franks Hot Sauce, 1 part melted butter.
6. Toss wings in sauce, place back in oven for 2 mins, NO LONGER - DO NOT COOK THE SAUCE, JUST WARM!
7. Serve with Celery and Blue Cheese Sauce on the side.

and there you have Buffalo Wings - TGI's Style.

Split and leave in a bag of flour for 24 hours, shaking from time to time.
Deep Fry
Add sauce - Mix of butter, Tabasco, Encona, cayenne pepper, paprika and salt, shake in container to coat wings.

I've tried many things in the past but simply grilled with salt and pepper seem to be the most popular in my house. I turn them over at least 4 times so they're nicely cooked and crispy.

What's this Franks sauce called exactly..?

is it... 'Franks Red Hot Original Cayennepepper '..?

Yep, you want the original one - http://www.franksredhot.com/products_o.php

They do others including Buffalo wing sauce, which is pre-mixed with the butter required by the proper recipe.

However, you will struggle to get any of them over here and I only know of Sainsbury's selling the original @ £1.49. Oh and the recipe is on the back of the bottle in case you need it.

Costco might well be a good call, not looked in there for it yet.

Here's how I cook mine: http://forums.overclockers.co.uk/showthread.php?t=17654206

Hottest sauce I can find.

Or wet paste using soy and chilli powder, think I had honey in it aswell. Was rather pleasing.

Covered with a spicy seasoning, brushed with olive oil and cooked in the over on a baking tray until crisp.

Good chicken wings are a must, the cheap ones come with no meat on them.
Cricklade butchers, i buy about 20 wings costs a few quid.

Then i mix together reggae reggae sauce, honey, ketchup and crushed garlic in a bowl.
Smear it on the wings liberally, leave in the fridge for a few hours just to permeate.
Then cook in the oven on a low heat until cooked. Usually eat them with salad and blue cheese dressing.

My mate bryan from trindad taught me that, awesome wings, and that guy knows his way around wings :D
