How important is a removeable mobo tray?

As the title says.

How much easier is it to install components with one? How difficult is it without (in a full tower case)?

It's not particularly important.

My first serious build had one, subsequent builds have not. From time to time I think "Oh I could have used one of them" but not often.

Essentially it means you have access to the back of the motherboard - many CPU coolers, and most waterblocks have retention plates or nuts that have to go on the back. It also can make it easier to access stuff to give you a bit more room to work with. However if things get really tight then it doesn't help, since you need to allow space and cable length to slide it in and out.

nice to have feature, but honestly probably the last thing on my list when selecting a case. my current case doesn't have one and i couldn't be bothered tbh

As others have said it's a nice feature, but not overly important unless you're planning on working on it every day ;)

I haven't had one for about 6 years in my machines because i've been using Antec cases, which are really solid and don't have the trays.

The downside of not having one is that in some cases it can make it a bit of a pain to fit the motherboard unless you look at it and think it through in advance.
