I wish to move to a cheaper supplier and I'm wondering how long the transfer takes?...and more importantly how long will my Google email be out of action for?

It can take anywhere from a few minutes to 48 hours for nameservers to change over.
Your google email shouldn't be out of action at all - you'll have the DNS entries for it set up on the old and new nameservers so it doesn't matter when it changes over.
