How many stream processors would be used ?

Hi all, I would like to know how many stream processors would be used in say a 6970 Xfire set up compared to a 6990 ?
Would it be like memory on graphics cards ? Where you have two cards both with 1 gig so 2 gig total but you would only ever use 1gig.
