...and is the X58 chipset the only one that supports it?

If your talking gaming, virtualy no difference.
Once you start throwing stuff like encoding and rendering at it however the extra bandwith is quite noticable.
 
The i7/X58 platform was only officially certified to run memory at 1066mhz so I imagine tri-channel helped considerably to boost performance, most people overclock and are able to run 1333-1600mhz though so the difference becomes minimal.
 
As everyone else has said really.

Pretty much nothing with regards to gaming performance and your normal OS usage.
