How should I cook this chunk of beef? (roast suggestions)

Hello all. Had a big 1.1kg chunk of slow roast beef in the freezer which ive decided to defrost and cook in some way for me and the mrs for tea tonight.

However I'm lacking inspiration.

Its a slow roast slab from Tesco (nothing fancy). I'm thinking something with dijon mustard but i'm not too sure which way to go with it?

Anyone any recommendations?

I'm leaning more towards a traditional roast affair and serve it with some yorkshire pudding, roasted veg (butternut squash, courgette, and peppers) and going to nip to supermarket for some spuds to do some roasties. But i'm stuck on what to do with the meat other than bang it in the oven for a good few hours on low heat so its nice and tender. Or should I try and make some pulled beef concoction?!
 
Gone with the following....

Made a marinade/sauce up from dijon, honey, thyme, salt, pepper and some butter, sealed the joint, then whacked most of the sauce on it.

Popped in over on 200 for 30 mins uncovered, then will take out pop some foil over it and cook for about 4 hours at 130-150ish.

Hopefully will turn out allright!
