How to backup my ROM with CWM?

I want to try out a few different ROM's but I also want to back up my current ROM using CWM.

I've booted into recovery mode, gone to backup and it just seems to be stuck on 'Backing up data'.

Is this the right way to do it?

Yes, just make sure you have enough space for the image that is being created. It will be several gigabytes in size - depending on what app/data you have.

It finally moved. I believe I have a backup now.

So if I put a ROM on and it goes wrong, I can just go straight to backup and reflash it and I'll be back to normal?

the backup is the reflash.

Just go to restore and choose the image you just made

Easy.
