How to delete 360 profile?

OK I've looked on the sticky and done a search, but I still can't work out how to delete my 360 profile for when I sell the console. Could someone point me in the right direction please.

Go to the last blade, then Memory and select hard drive or memory card and then gamer profiles and delete that.

Also might want to format it to delete any game saves and such.
