How to do good homemade pickles?

Are there any of you who do your own pickles?

I want to have a go at pickling some cabbage, onions etc etc as I love them!

By all means post your recipes/ formulae which you've found to work.

Love making Delia's pickled peppers and courgette - make it a few times a year. Best left for 3 months, but still great after a mont or so.
