Heres a shot I took today, the botton left is over exposed, are any post processing techniques I could use to correct this?
I have photoshop CS3. Any help would be greatly appreciated.

You could roughly select the over-exposed area then feather it (20 pixels worked for the above image, but this would need to be higher if the image resolution is higer). Then Layer > New Adjustment Layer > Curves and drag the curve down slightly towards the left.

You could burn it by hand quite easily using the burn tool, with a low exposure of about 5%, 30% hardness5 and set to midtones. Do the same a tiny bit with highlights, and it'll look fine ;)

Just set the brush to a large enough size so you don't get dark patches where the brush strokes overlap, i.e for the picture at the resolution in your post, a brush dia. of about 300 pixels should work fine.
