I have currently got 2 hardrives, a 500gb caviar and a 250gb caviar, the items on them are as follows:

250gb:
Vista home premium 64bit
Drivers
Some Programs

500gb:
Media (videos and music etc)
games
many more programs

I am thinking about adding XP onto the computer aswell so i can dual boot for some things that XP is required for, which drive should i install to and how would you organise my files?

Like you are at the moment.

Operating systems on the 250GB and media/files etc. on the 500GB.

Tis similar to what I do, I have 2 500gb drives, first is split into 50gb and the rest, 50gb for OS and apps, the rest I use as a spare dump/save area for latest download of apps/drivers/games patches/backups. The second drive is for documents, mp3, videos, games and a work area for any video encoding I might do.

Im not the best person at these things but can i assign a 200gb of the 500gb for vista, another 200gb for XP, the last 100gb for media (i only really have music and that only takes around 7gb) and leave the 250gb alone for programs and games?

You might as well put the programs on the same partition as the OS cos if you need to reinstall the OS you'll have to reinstall the programs anyway.
200GB for Vista and XP each is probably more than enough, you'll probably be alright with 100GB each.
I'd split the 250GB drive into two 125GB for Vista, 125GB for XP and use your 500GB for media and everything else.

I would normally put it something like this

OS - 3/4 of first drive
Drivers/Applications (installers/zips etc) - 1/4 of first drive

BACkUP - 1/4 of second drive as backup image using true acronis
Any other files like music documents e.t.c - 3/4 of second drive.
