I have a HP DL 580 G5 with 128 GB RAM, 3 TB disks and 2 x Xeon E7440 CPU and want to use it running Windows Server 2012 with Hyper-V so can deploy virtual machine for a XenApp 6.5 development.

As far as HP, these servers are not officially supported, was wondering has anyone deployed Server 2012 on these servers and any issues to be aware of.

I haven't but I'd give the standard advice I'd give to anyone deploying an HP server.

Get the HP Support Pack for Proliant, and get the firmware updated. Once the OS is on run it from Windows and let it update with all the latest drivers, management software, etc.
G5 support was dropped in the most recent SPP, but the previous one (2014.06.0) still supported them. Unfortunately you now need an active support agreement to download it from HP, but if you have other servers with active contracts you'll still be able to access it.

just to confirm I managed to install Server 2012 standard edition with Hyper V as well and am running 4 virtual servers as a XenApp 6.5 test environment
