what can a blind apple specialist actually do??

this is not a trick question, i do know of a person who is blind and is employed as an apple specialist.

Pretty much as others have said. My aunt's registered VI (retinitis pigmentosa, among other things), Apple were extremely helpful in getting her up and running with various phones and tablets across the years... that Apple have mangled assistive tech a bit in iOS 15 hasn't helped, but they do seem to do vastly better than other mobile manufacturers from her personal experience.
