.. remove ram covers/chasis and put on another brand/type of cover that more suits your color scheme?

As in, i have Gskill ripjaw reds and seen some cheap OCZ ram on ebay which is gold, which is a color scheme im thinking about.
So,i dont suppose i can just remove the gold OCZ and ''clip'' it onto my Gskill nah lol ?

You can but it would void the warranty and there is potential to remove one of the memory chips from the PCB!

Paint them?

Not sure how viable that would be and no idea what paint you would use either.

Have you considered.......a new build?

It's easy to do mate, just use a hair dryer, or a hot air gun, to warm up the thermal pads that are on the memory modules, under the heat spreader.

Somebody in here a couple of weeks ago ripped two of the memory chips off the pcb doing this. That was also Gskill ram. What about a vinyl wrap? You should be able to get some vinyl from somewhere and cut it to size/shape. At least you could peel it off again should you need to return it for warranty purposes.
