if you live in a hot country you cant really go wrong with any of those cases, unless by hot you mean rediculously hot lol

You could knock off £200 and get a half decent water cooling system, it would be worth it. I think there are some graphics cards with water blocks built in anyway.

Pointless, video cards with waterblocks already attatched cost far more than a card with stock cooling.

the gigabyte GA-EX58-UD5 board in the i7 bundle can support both crossfire and sli setups so you'll be fine with 2 4890's

and the haf has brilliant airflow and its a good sized case so all your components will fit in easily

I might be mistaken, but I think EVERY X58 board supports crossfire, and there are only 4 or 5 that don't support SLI.

I just had a look over OC's site and put together this quick list of parts for you to consider. Its under your £1270 budget and I have taken into account the parts you say you allready have. well i live in cyprus and in summer it gets up to 50 degrees very very rarely. but the thing is i wont be using the computer in the summer since i go holiday. but i can say its still hot...
