I have no idea about CPU temperatures, is it similar to the GPU?

Those max temps are after a couple hours of gaming, isn't that enough of a stress?

Its up to you really. I used to only play certain games and my machine was perfectly stable at the time for that...Then I played a new game and wondered why it always bombed out or blue screened. Very annoying

I would use Realbbench as it loads both CPU and GPU at the same time so in theory will be stable for any game. That said, its best to use multiple benchmarks and games to test for stability. Realbench Benchmark, Realbench Stresstest, Heaven 4.0 and Valley should provide a solid starting point
 
Those temps are very good for a few hours gaming.

I'd start considering getting worried if my CPU was in the 70s when gaming.
