I need help with Mechanical Keyboards I'm too lost.

I've been looking at getting a mechanical keyboard, but I have no idea what I'm doing.
I'm looking at a 65% or 75%, needs to be wireless and I can control 3 devices with a switch or button.

What I'm lost by is how the keycaps work and how the layouts work. We use the ISO layout but so many of the keyboards available are in the ANSI format. How do people navigate between the two? Have keyboardaphiles adopted the ANSI layout or is there a way to get the @ in the correct location?
What are the differences between the double shot keycaps?

Any recommendations for brands and models to get?
  • 65/75%
  • RGB is preferable, I don't mind the gaudiness
  • I'd like to get a very simple design of the keycaps if I need to buy them separately
  • Not too loud as it's going to be used for office work
  • Budget around £150
Anything else I need to think about or consider before I plunge in?
 
Just an update I bought a cheapo one from Amazon that is an ANSI layout, I've been using it for maybe 2 hours last night and it's really not that bad to get over the ANSI.

I really like the NuPhy 75 I saw online, I'm just going to watch a few videos to see how the RGB works (I do love the tackiness).
