i5 or i7?

I was going to go with i5 because it's cheaper than i7 (1366), but since I'm going to spend a lot on the build I might aswell go the whole way and get the i7..

If I was to do some music production and video editing, how much of a difference would the i7 920 be compared to the i5 750?

Yea, that spec looks pretty good! If I was you I'd get that over an i5 rig. Im using an i5 750 but purely because I got a mobo cheap on launch day. If not, I'd of got a 920, better and not much extra if you choose the right parts :)
 
If you're going to do video editing then sure, go for the i7. The extra threads will help with that. Just don't delude yourself into buying it if you're not going to use it, the i5 is better at pretty much everything apart from high intensity design work and, like you say, video editing and the like.

There's an inexplicably large amount of people here who are perfectly happy to recommend i7 920s to gamers. Unless you need the extra threads and have the applications to utilise them, do not buy an i7.

The i5 is the better performer at a lower cost.
