i7 6700K issue

purchased the OEM version in early september 2016, I use a noctua fan cooler on it which has a single 120mm fan. Asus Z170 Sabertooth motherboard
My issue is with overclocking, ive tried multiple times to overclock it using the method that all the youtube channels say and I get the same results:

- My pc random freezes every couple of hours for 5-20 seconds
- My CPU fan is quiet as usual and then just shoots up to 70c every 5-10 minutes and the fan starts going crazy for a few seconds
- I dont see much if any performance change
- in games the cpu fan goes crazy aswell with temps of up to 80 with 100% fan speed
- CPU-Z doesn't display the overclock at all

I dont understand what im doing wrong? Are the fans meant to be going mental when you have overclocked it?
Im considering getting rid of it and the motherboard for a 8700k, is it worth it?

You need to be more specific in telling us your BIOS settings for the overclock. If it doesn't behave like this at stock, then it's clearly your manual settings that are causing it.

What Vcore voltage have you set?
What multiplier have you set?
What fan curve have you set?
Have you adjusted power management settings?
Have you set any XMP profile on RAM?

Screen caps of BIOS settings would be a big help here.

What cooler specifically are you using?
Could be a multitude of issues but knowing the exact cooler is a start.

Again I'm on my phone so I csn find the exact model in the morning, but off the top of my head It has 1 120mm fan thats in between 2 giant metal things
 
You could just have a poor example, eg mine needs 1.4V to reach 4.6Ghz stable on a Prime95 load but becomes almost uncoolable using a 280mm AIO so it's stepped down to 4.5Ghz.
