Am i being too simplistic or have I just got this wrong? Does an i7 overclock itself depending on the application demands placed upon it? If so, what would be the point of manually overclocking it to a fixed speed?

The speed at which Intel turbo boost takes it to is minimal, were overclocking yourself you can go much higher.
