So far I have the following ingredients for tonights dinner

Cooked Rice
Chicken breast (with dry piri piri rub)
Chorizo
Spring Onion
Red Onion
Yellow Pepper
Mini Tomatoes (little yellow, orange and red ones)

My idea was to simply slice everything up, stir fry and then add the rice to heat through and serve.

But I would like to add a little moisture so am looking for a way to add a simple sauce to it.

Any ideas?
 
I'd make fried rice like you say, little bit of oil should keep it separate like from takeaway. Or use soy-sauce or something.
 
Make a sauce from the vegetables (maybe keep the peppers for the rice), serve over the chicken with the reheated rice with peppers on the side.

Probably use the chorizo another day.
 
I would have done stuffed pepper with a nice salad or at least some of the leftover ingredients stir-fried.

id have given it all to the Indian takeaway delivery man as a tip ;)

no, id have gone for a stir fry with it and added a bag of bean shoots
