If I order something at 4:40PM on Thursday and choose Saturday delivery with DPD...

Depends on the retailer they have different times for last order before they will offer next day delivery.

Saturday delivery is Saturday delivery - delivery on the next Saturday. Order it Monday, order it Thursday, it's coming on Saturday. This is why they call it Saturday delivery and why they charge more for it. It's a premium scheduled service for people for whom weekday deliver is not convenient.
Most people who have paid extra for Saturday delivery would be fairly miffed if the delivery guy tried to deliver whilst they were at work on a Friday I'd imagine..
