If i plug my 2011 imac sdd boot drive into a 2012 mac mini - will it boot and work ok?

As per the question really - i'm donating my 2011 imac to my kids. Currently that boots off an external thunderbolt ssd drive. If I plug that ssd drive into a mac mini from 2012 which has similar though obviously not identical specs, will i be able to clone the disk across to the mac mini's internal drive and have things 'as they were' on my imac but now on the mac mini?

Yes, that should work providing the OS you have running on the iMac is one which that the Mac mini supports. Boot from the external drive and then run SuperDuper! to clone from the external drive to the internal.

Another way to do it is via Migration Assistant.
