If there was one game.......

Let's go for some retro.

Dungeon Master - awesome game - imagine that with 4 co-op people rather than the single player.

Elite: Frontier - again another superb game - but if it had a proper living universe then that would be the icing on the cake.

Target Renegade - just a fun beat em up - we don't seem to get any on the PC anymore... :(

Mercenary or Damocles from the C64/Amiga updated with a recent 3D engine would be awesome if they did it right. Shame Psygnosis/Sony canned the PC version of Damocles when it was almost finished to give the PS1 a headstart in the 3D gaming world.
 
Elite which I liked on the BBC micro and Quake - the first one, excellent game, be even better if they added a slight rpg element to it.

Most games aren't like people, they don't die :)
I'd like to save X-COM Alliance from being canned though, that sounded awesome.
