Death Star or Mount Doom, it depends on the day.
If you could remake an old skool game with super sexy graphics, but not change a single thing with regards to game play! What would it be?

I vote for Half Life and Carmegeddon.
 
Final Fantasy 8 and 9. If Sony announced an updated version with better graphics and charachter voices I would go buy a PS3 tomorrow. Simple.
 
Zelda on snes, i think it was A Link to the Past, the one with the magic mirror.

Sure i'll think up some more lol.
 
Agree with fallout 2, my fav game of all time.

Syndicate was also a game i wasted many hours on. just getting tons of people following me to use as meat shields was great. Though it made me lose missions =(
 
Baldur's Gate 1 and 2 would be great redone with modern graphics (and possibly more voice acting presuming that the same people would be doing the voices). Same goes for Planescape Torment.

Also Deus Ex. That needs to be remade in the Crysis engine.

I agree with Fallout 2. Might as well do Fallout 1 while you're at it too.
 
Heavy Gear and Mechwarrior 2.

Then update Transport Tycoons gfx a little, but dont touch the gameplay.

Follow that up with Total Annihilation and Commanche3 and Id be a happy bunny
