A friend of mine at University told me that the way he makes his chips is:

Chops the potatoes into thick slices,
Place in an oven dish,
Smother with oil,
Salt and pepper,
And roast for 30 minutes or so at 220C.

I love the taste of chips from the 'chip shop' and i'm looking for alternative recepies, perhaps with other spices? What would you recommend as my spices knowledge is very limited besides salt and peper. :o

Chips with smothered in gravy.

Try wedging small potatoes you get from the supermarket, with the skin on after a wash.

Add some sea salt, some pepper and a good mix of paprika and olive oil. roast in the oven at top shelf 220C for 30 to 45mins depending on how crispy you like it. They go great with some salsa :)

Aren't some of these simply roast potatoes? Sorry for saying it but I thought chips done in that chippy way are normally fried in really hot oil. Making tasty but very dangerous treats.

What condiments to you intend on using?

May I sugges Alioli and Ketchup and HP sauce.

Also I'd use olive oil and end up putting a ton of garlic in the tray because roast garlic mmmm.

Also try using (as mentioned earlier) sweet potatoes too.
You could go mad and make carrot, parsnip, sweet potato and potato chips all at once!
