How do they fake that?

Pretty easy to do in Premiere.

Chroma key a flying man. Drop something big into a pool and mask it out, keeping the splash.

There's all kinds of software out there that could be used to create it, most likely a camera tracking package such as Boujou or pf track then some form of 3d software to create the cg stuntman, maybe even a high end package like Endorphin to create the fake motion of the character, after that it would be composed in another package, Combustion for example
