Hey there :-)

This concerns both Windows 8.0 and 8.1 as I'm using the former and my step-dad is using the latter. We've both been carrying out on-site and off-site backups manually and we're after some recommendations that are automated. That's both 3rd party, Windows own software, and whether there are any differences between 8.0 and 8.1. We're familiar with network shares (NAS) if that helps.

Thanks.

Look into crashplan. A paid subscription would allow you to back up to their cloud but for free you could both install the software and save your back ups to the other person's PC. You can also do local (hard drive) or network (NAS) backups for free

+1 for Crashplan, it works brilliantly, is encrypted and even they don't know the passphrase etc (which btw means it's up to you to ensure you do).

I use the paid service now but did use the free version for about a year to backup to my dads PC in his house.

Excellent, nice to see a no cap backup for online - Google etc are quite costly!
