Assume that I want a fully water cooled system and dont feel confident building it myself. Also assume that I have a decent budget, and that I'm allowed to 'treat' myself this one time instead of just continuing to upgrade my 4 year old i7 air cooled rig. Finally, I'm not fussed about 4k.

Firstly, any idea when the components for this will be back in stock? I'm looking at the 980ti watercooled cards and coolant showing as OOS currently.

Would it go significantly beyond 60fps on current gen games? Enough to justify my selling on my BenQ 2710PT (which I am fairly happy with) in favour of a 1440p Gsync panel? I'm guessing that will cost an additional £300 (net) or so for a decent one such as the Asus ROG Swift.

Trying to decide whether to go all out for this now for future proofing (want at least 4 years out of it) or maybe step down to the single card Scimitar and save £800....
 
I'd suggest stepping down. Give it a few months for the dust to settle as currently even dual 980ti's won't do 4k with all the bells and whistles. VR (if it takes off) will need a bit more umph too.

If you get something that'll do 1080p very nicely, wait a year, see what pascal + whatever AMD are cooking do (just to see if they're able to get near single card 4k territory) otherwise you're sort of going all in on a half-step upgrade.

I've deliberately spent a little this year on getting myself a really solid 1080p setup, spent a bit on better cooling/memory/etc with the intent of "does 4k nicely" being my next big setup in about a year/18 months time.
