Information overload, Do I change my OCUK purchase?

Posted a thread about a week back for a new rig I was going to build, as follows;
Intel Core 2 DUO LGA775 E6600 2.40GHz Retail / Asus P5B / 2GB GeIL PC2-6400C4 DDR2 Dual Channel Kit - Bundle (BU-037-OK)
Now I looked at a graphics card and posted another thread, got some good info and decided that with my budget I would go for a GeForce 7950 GT! So I was all set to make my perchance and get the build sorted!
Now I have some more funds and was tonight looking around OC forums and also on some hardware review sites and want to get a second 7950 GT and go SLI!
Hmm, now looking at the Motherboard and it doesn’t support SLI!
So I looked at a bucket of threads on here to see if I could come up with a decent replacement for the P5B.
I really wanted to stick with ASUS as I’ve got a board of there’s at the moment and it’s been rock solid for the past three years.
It seems I’m back at square one again. Do I go for the P5B and ditch SLI of should I find a replacement all together?
I will most probably not mess around to much in the BIOS over clocking the rig so not really bothered to much about features. However from reading some of the threads and user’s experiences with SLI configurations and unstable BIOS I really would like to get a board from recommendation.
