Hi all,

I've had an idea for a Christmas Present to the missus.

I am going to make her some Apple Flavoured gin which we will mix with fresh mint/lime leaves on the day to make a apple mojito.

So far I have bought a nice kilner jar with a stopper. Freezed dried apple chunks - I saw the idea in M&S so thought I could do that!

I need to work out whether to use plain caster sugar or golden. From what I understand golden is sweeter (she doesn't like things too sweet especially drinks so I am thinking plain?)

And then I want to pick up some really plain gin so probably something like original gordans.

Any ideas on the sugar front? This was the original idea

The other thing is I have nought a different bottle (not click lock but a plug bottle) so hope that's fine too (not sure if it needs to be click lock to help gasses escape? could be chatting rubbish here)

Apple flavoured gin...apple mojito...I think you've gotten your spirits mixed up!

I haven't it's intentional don't worry (if it taste horrible with the mint I wont use it, I should probably add theres no rum in the recipe either)

Isn't Gin already an infusion of Spirit (Vodka) and Botanticals??!!

If so couldn't you make a personalised London Dry Gin?

I thought Gin was actually a distillation of fermented Sloe with juniper + anything else etc.

Local one distilled here is Silent Pool. However it would overpower any apple you put in it!

You can't make a mojito without mint and by replacing the rum with gin... well, you're making a Fizz or a Rickey.

And for ease and simplicity, you want simple syrup instead of sugar. Try both caster and demerara sugar and experiment with both.

Right, let me stop you there. Forget infusing Gordons with anything - it's far too heavy on the juniper for that.

Your best bet is to start with a gin that has a strong apple base and work from there - Chase is made from Apple Vodka and then re-distilled, but my preference would be Caorunn, which for me tastes crisper despite not having a apple base to it.

Oh, and you'll struggle to get anything out of freeze-dried apples - what you really want is apple peel and use those to infuse those into your gin, bathtub-style.

Gin is a distilled spirit base with botanical flavouring added via a variety of different methods - with juniper usually, but not always, being present.

Sloe gin is gin that has had sloe berries left to infuse directly in the spirit. Or, in the case of some notable examples, had a distillate of sloe added to the base spirit at which point it is then re-distilled.
