I dont know why - I picked up a Raspberry PI 400 in the market place. Was curious.

Anybody have one of these - what do YOU do with it?

Ive never used Linux etc - ever - is there a better OS to install to start with for example?

How long is a piece of string ;) As it's a Linux based low power computer you can do almost anything with it. It even has some digital IO pins so it can be easily interfaced to electronics. Many people use them for small server/hosting projects, for media servers/players, retro emulation stations and learning about digital electronics and IOT etc. Have a look at https://pimylifeup.com/ for many ideas.

Also try out RiscOS for a completely different take on what constitutes a good OS. It was originally hand written for the ARM so , absolutely flies (or it used to )

I have a Pi 3 running Debian + PiHole for network wide ad/domain blocking, though it's starting to show its age, gonna have to start looking for faster alternatives at some point.

Edit: oh I kinda misread the post, but my usecase probably would still be the same if I had a Pi 400, I'd hook it up to a cheap monitor and do sysadmin stuff without SSHing, I actually do have the space for that, I might consider it, hmmm.
