Install windows from backup to RADI0

Morning all,

Following a thread I posted about Raid vs SSD, I'm back with more questions I hope you guys can answer easily without telling me I'm a complete noob lol.

Currently running on 1x 480gb SSD.
Moving to 2x 512gb SSD's in Raid0.

I assume the process of backup and restore is no different from 1 SSD compared to 2?
Something I'm not quite getting my noggin round:

I create a system image using AOMEI (I thinks that's the name anyway) and also using the tool in windows (just to be safe)
both methods take around 20 minutes to complete.
Have also created the restore disc (and USB with AOMEI).

Is that all I need to do? Should I also be doing a backup of my C drive?
If I create a system image - 20-25 mins
If I create a backup - hours.
Why the difference? from what I read on-line the system image is pretty much a full copy of files and folders etc. - everything needed to re-install windows. Why then, does a backup (which I think does more or less the same thing) take so much longer?

What am I missing?
Do I need to create a backup AND a system image in order to move from 1 SSD to RAID0?

I believe the system image is just windows and users files, backup will be everything on the SSD.
If I were you, I'd do a backup onto another drive, then apply the backup to your RAID'd ssd's
