Insurance advice needed

Got knocked off my bike early April and didnt get out of hospital until 2nd week June. I've been contacting my insurance co ( bennetts but under written by LV ) to negotiate the price ( written off but according to police it was just fairing damage )
Finally agreed on price today and I get to keep the salvage, I ask to confirm my bikes still complete and not missing any parts, chap taps away on his keyboard and goes quite then tells me he will call me back. Ten minutes later he calls me back and turns out they have sold the bike to salvage back in start of June while I was still in hospital ! Not happy. Escalated to there complaints department now apparently they will get back to me within five days.

Annoying thing is I've been taking to them for weeks about getting my bike back and no one told me that they had scrapped it last month without my permission.
 
What bike was it?
Ducati 749 Old bike now but was in immaculate condition prior to accident and according to police only suffered faring damage. It was a fairly low speed accident.

They called today and offered me £500 to apologise for selling my bike which I rejected. The chap who bought it has broken it and has got about £3k for the pasts he has sold so far !
 
How do you know how much the guy who's bought it made on parts?
I searched by completed listings and added up all sold parts from my bike.

He even sold the exhaust as a termi system ( its actually a racefit ) and sold it for £899 !
 
Quick update, I've now raised a complaint with the financial ombudsman who were very helpful. So will see how they get on
 
Not a lot has happened so far apart from the ombudsman has raised a separate complaint regarding the rudeness of the engineers when they were talking to me.

The ombudsman replied to my ebay list of parts acknowledging it but saying that there is no proof that the parts are mine.
I responded saying that I have hundreds of pictures of the bike taken when I have repaired / maintained which show the parts are mine.

Sorry for the lack of updates !

Shortened version is that I ended up with a payout of roughly twice what I payed for the bike 3 years ago ( i had done lots of work and upgrades though )

I've now kept with the Italian theme and got a RSV R ( bought now for me to clean up and work on over the winter and ride in the summer, hopefully I will have properly recovered by then as well )

Also another quick update on importance of dash / helmet cameras. Gutted I didnt use one when I had this accident but a few weeks ago in my car ( the 1 series ) I was following a HGV on the A38 when a load of rocks / gravel spilled out the top. window cracked and a load of paint chips. With the dash camera evidence it was so easy, repair bill of £4.5K = car written off with no question of who was liable.

So in 27 years of driving I've never had a vehicle written off ! This year my bike and my car have been written off !!!
