Intel 3820 or 3770k

Gaming mainly.

Might be an idea to go with 3820, with new consoles on the way, there might be a sharp rise in system requirements, so at least you can upgrade to a hex core or something when that happens. but i bet most people will say 3570k. i remember getting flamed when i suggested someone get a core 2 quad over a e8400, a year later e8400s were showing there age and the core 2 q9450 i suggested is still pretty strong today! id deffo go with socket 2011 if my mobo broke down today

I'd go with the 3820, the X79 has future uses whereas 1155 is now a dead platform.

Dead is a bit premature, to be honest, the Z77 chipset released April 8th and the q77/q75/b75 chipset released may 13th, both socket 1155 are the currant mainstream chipsets.
They wont be replaced till haswell finally gets here and who knows what features Ivy bridge E will bring, meaning that to use them fully you will need a new 2011 motherboard.

Dying maybe but not dead yet.
 
I wouldn't have said the 1155 socket was dead. Sure no more chips are being brought on the socket but its not as if the chips will stop playing new games in a few months. They'll happily last a few years.

Go for the 3930K if you can afford it :) Just remember you need a 2011 compatibel heatsink as Xeons dont come with stock ones.
