Ive been woundering, im not sure what a server actually is, i just know it runs things on the internet like games etc, but would a processor built for servers be any good in a normal gaming pc?

There's no evidence of such though. I've certainly not seen any results that suggest they'll overclock any further than the C2Q chips, they may even overclock worse because the highest clocked C2Q need better silicon to run at that speed as cooly as possible.

I have the X3210 Quad Xeon, and that seems to overclock pretty well. It did 333 fsb straight out of the box on stock volts, and I have no need to push it further. Much better than the core 2 duo in my signature.

A core2quad marketed towards 'value' single cpu server systems. They work in standard consumer 775 boards as well.

All cpu's can (should be be able to) do 24/7 operation.
