iPhone iCloud account question

Sorry for the noob question, Android user and I'm trying to help someone get rid of their iPhone and end their sim card contract so the number will be gone soon.

Currently their standard 5GB iCloud/Apple account has a backup of stuff like Notes and Photos.

After signing out and resetting the old iPhone, and then ending the phone number will the iCloud/Apple account still keep their backed up Notes, Photos etc?

I'm also wondering as it currently uses 2-factor-auth (sending a text to the mobile number) how will that work without a number in future?

Given that they probably won't have another iPhone will that iCloud account automatically end sometime?
 
Without the phone number linked to 2FA and another Apple device signed into the account, they'll lose access to it once the device is reset and the phone number ended. I'd recommend changing the phone number on the iCloud account to their new number so should they want to gain access again in the future they still can.

as others have intimated, if they have their iphone to back up to icloud, notes and photos will do so. Additionally with 2FA on windows, there are different plugins that'll allow you to access the six digit code.
