iPhone iPod Questions

Hey,
I trialled my iPhone's iPod features on the way home from uni today and connected the headphone port to the AUX IN on my car stereo and it worked fine. Problem being, is that if I want to skip to the next track, see what is playing, go to the previous track, pause the track or whatever, I ahve the presse either the power button or the home button and slide to unlick to be able to activate those controls and doing both of those whilst driving is not very easy. Is there any way that I can quickly tell the iphone to not lock itself. I don;t exactly wnat to have to go into settings and manually alter the lock time before and after each journey. I am getting a car mount from Brodit so the device will be charging from the dock connector as i am driving.

Any suggestions here?

you can switch off autolock, but thats an on/off setting not something you can tell it do do only when something is plugged into the headphone jack...
 
Also, I tried using the voice control whilst in the car and I pressed and held the home button but the sound the iPhone makes to tell you when to speak is emitted from the iPhones built in speaker even though the headphone plug was connected to my stereo?

How can I alter this?
