Since the new tariff is coming out i quite fancy going for the £35 one since the text allowance been turned up and i quite fancy it for the unlimited data.... What i like to know would i have to restore me iPhone back to factory state? How should i do this? Also after i have registered the o2 sim that came with the phone is it wise to jailbreak again or just take advantage of the new new firmware 1.1.3 and keep waiting for new ones popping up? wonder how often they will realease new firmwares?

Restore the iPhone in iTunes by clicking "Restore"
You're free to jailbreak the iPhone once you're activated, because if all else fails you can just restore and start again.. what with the 1.1.3 jailbreak being so shaky you'd have to wait at the moment anyway.
