ipod backing up software

Can anyone recommend the best software to backup the contents of an ipod. I tried using the latest version of itunes... but it does not copy all the apps and app data to the PC/laptop? It is the app and appdata... that i need to backup the most.

Do you have iCloud enabled? If so, it'll only automatically sync media by default. If you run a manual backup it'll backup everything.

its an old ipod... i did then manual backup through itunes.. it asks if i want to backup apps that are not saved on the laptop already.. i click yes... but it doesn't seem to copy them to the laptop.
not tried icloud... not sure if the user.. my boss's daugther has incloud
