You can't do "folders" full stop, even in iTunes, so not really sure what you are meaning in regards to your folders in iTunes.
You can do playlists, or media sorted by any combination of the following:
Artist
Album
Song
Genre

Taking this as your example:
You have your entire iPod (call that the "Music" Folder), your "sub-folder" (with name of HipHop) would actually be the GENRE you assign to those particular tracks/artists/albums.
So on your iPod, you can do the following:
Menu > Music > Genre (Select HipHop) > Artist (Select ANY HipHop Atrist) > Album (Select ANY Album from previously selected Artist) > Song (Any Song from previously selected Album).
This is EXACTLY what you are trying to achieve, all you need to do is make sure in iTunes, the music is correctly sorted into Genre / Album / Artist.
EDIT: With regard to your audiobooks, I just give those the Genre of AudioBook, the book name as the Album, and the track name as the chapter.
At least that is how I have the Hitchikers Guide on my iPod.
