sorry for the noob question, but here goes:

I have two ipod touches, and both are jailbroken
I've one set up just how I like it and I'd like to match the other one, plus a number of other ipods to be identical to the first one...
(all ipods are 4th gen)

Is it possible to take an image of the reference one, say extract the ipsw and then use that to flash the other ones to make them identical to the first one, without manually configuring them?

If you want it to be exactly the same on the other iPod, just backup the iPod with the settings you like. Then restore other iPods with the backup file you just made.

This will transfer app data, contacts etc etc but not your music.
 
Yup, do it through iTunes.

Follow these steps:
1. Connect the iPod with settings/apps you want to preserve.
2. Right click the iDevice name in the left "Devices" section. Click "Back up"
3. Back up is saved.
4. Disconnect this iPod, and connect the next iPod you want to restore using these settings.
5. In this devices 'Summary" tab, you should be able to see "Check for updates" and "Restore". Click "Restore".
6. A pop-up will appear asking if you want to back up this device before restoring. This is up to you to decide.
7. Wait till restoration is complete. Then disconnect.
8. Follow steps 4 to 7 for the other iPods you want to be identical to the first iPod you backed up.

The IPSW back up basically an image of your original iPod.
