ipods play the following audio formats

AAC (mp4 or m4a)
Protected AAC (from iTunes Store)
MP3 CBR,
MP3 VBR,
Audible
Apple Lossless
AIFF and WAV

So your mp3s should be simple. I'd suggest reading up on itunes before you install (www.ilounge.com is a good place with lots of guides), as it likes to organise music in its own way, which some people don't like (me included) so I do it myself and simply point itunes to my music directory rather than let it do its own thing. You can of course just let it search your computer and find all your music.

Videos i've no idea about, as i don't have a video capable ipod.
