For example, I if I purchased a Antec Nine Hundred,
2 x 120mm blue LED fan (1200RPM)
1 x 120mm TriCool,1 x 200mm TriCool

How many more fans would be recommended that I purchase?

I would be running an overclocked 6950 (possibly 2 in crossfire) and i5-2500k

The Antec 900 is excellent at it's cooling performance having a quick look at reviews, and thus is supplied with some excellent fans.
There isn't really anywhere else you can add a fan to this case unless you were considering a 'push-pull' format or a bay cooler.

For overclocking, you could always go watercooled for the CPU, such as the Corsair H70.
You could also mount a nice 120mm fan to the side like HERE

Then again if you're not happy with the airflow of the fans, buy some nice Akasa Apache's or Vipers.

As above really.

I now use a Fractal Define R2 but my previous case was an antec 900.

I used the stock fans that came with it and found the cooling performance to be excellent! However the tradeoff was the ammount of dust the thing inhaled and the noise. It would need cleaning out quite often even with the front intakes modded with dust filters. The stock fans were also pretty noisy even on the lowest settings.

If you are gonna go for one i would look at the 902 and the fans will give you great cooling performance. If you want to keep things quieter then switch the fans for something a bit quieter.
