Is it ok to update my gfx drivers through windows update?

Just download and install them yourself. 
Windows update is good and I use it often for hard to find drivers (old network cards, monitors etc), but I don't think I would use it for Graphics drivers. Just download it from the ATI site, making sure all remains of your old card is removed first of all. It wont take long.

i've updated mine from ATI yet in my vista update there is still ATI drivers for me to instal. What could these be as i'm on 9.1.
When updating my drivers should i uninstall the current ones before installing the new ones?

I normally uninstall my drivers then run driver cleaner to make sure i got everything.
I once let Windows Update download a set of nvidia drivers to see how it worked and it completely screwed up my nvdia drivers. I had to run driver cleaner and reinstall them. I would risk it when its so easy to download them and install yourself.
