At the moment I'm running a 1055t 6 core, I'm thinking of getting a fx8350, I mostly encode video etc not much gaming, so would it be worth it?
 
firstly the fx8350 would throttle in you board, so you'd need to mod the vrm cooling and undervolt the cpu, or get a better board.
It depends on what actual programs you use to encode so be careful what reviews you look at.

I wouldnt consider a non k version of an i5 to a fx8350 if you don't really game.
fx8350 would be my choice if i had bought a decent am3 board from the start.
fx8350 from an x6, I don't think i'd bother

But what does firstly the fx8350 would throttle in you board mean?

Why would it throttle as it's in the list of compatible cpu's for the mobo?
 
I ran 8120 and 8320 on a m5a78l-m lx2 with no issues at all , in fact they clocked a lot better then they would in the more expensive and newer asrock I bought thinking it would be an upgrade :(

The new fx chips run hot ,the motherboards vrms tend to get too hot and cause the chip to throttle down, I didn't have this problem with the asus board but I did with the asrock

Questionable considering that board you mention only has a 3+1 vrm and no heatsink, I wouldn't run a phenom x4 on that.
The ops board is 4+1 with no heatsink.

The op would need a good 8+2, or a digi design like from asus.
 
Well that's how it was I only really saved or posted any benchmarks with the 8120 as I didn't keep the 8320 for long. I ran it at 3.8 24/7 it would run at 4ghz but the cpu would get too hot for my liking.When I got the asrock the chip wouldn't run stable above 3.6 at all

well thats kewl but that fails to mention that in a gaming situation you arent utilising all of the cpu threads or at 100%. so in other words if you used apps like handbrake then with all the threads utilised you would see throttling. Those vrms would have been getting crazy hot, so would only have been a matter of time before you saw something like this.
