Is it worth upgrading a 8700k?

I'm in the same boat as you OP, using the 8700k with a 3090FE and resizable bar enabled I generally use my main 1440p 165hz monitor along with my 1080p 144hz monitor above but sometimes I can run 4 screens at the same time so I think my GPU is going to be more important here.

Although the 8700k is a great CPU for its time it's clear to see how much improved the 13th gen have become and I've been hovering my finger over the buy button for a while now lol.

Yeah I get that, and 'possible' delays until 2024 for the Meteor to land? Who knows?
