Is there an easier solution.

Long story short, one of my colleagues "accidentally" deleted some email sub folders on her new iPhone. These were subsequently deleted from Outlook/OWA and i was not able to restore them, they were just gone.

So ive got hold of the full SBS backup from the previous day which had all the folders.

Now my problem, we are currently moving offices and have moved all our non critical gear into storage, which for one reason or another i cant get to atm. All ive got access to is the SBS server and an external hard-drive, where the backup is. What is the easiest way to get to the subfolders? I have the full server backup including the .edb of the Exchange Database, i would prefer not to start mounting things atm as if the server does go wonky, i have a massive problem, is their any way to get the PST direct from the edb??? any advice will be great.
