Is there any apps to install on my windows server to monitor activity?

Im looking for a decent application which will run on my servers background to monitor activity, like say if someone transferred a file across from the server to a workstation or if someone is streaming media etc, not so much a packet sniffer but more of a universal tool.

Any help appriciated.

I ain't no server expert but if you can give us some more details others may have some answers.

What operating systems are the servers running on?
What information do you want to log, be as specific and give real world examples?
Why are you logging the information?
How do you want to be notified abut activity?
 
If you're running Windows 2003 domain you can turn on auditing which will create an audit everytime someone opens a file from that server. For streaming stuff from the web you need some kind of proxy in place.

All depends on what configuration you have.

Currently running Windows server 2003 at home, need to configure media streaming server but at the moment its just file shares etc. I just want to generally see how much the server is going to be accessed/streamed from. Some type of application or graph/tables with info on what is being accessed and by who.
